Gluten free from Indiana

I met a lovely family from Indiana who were surprised I was able to cook gluten free for their young son. His name was Isaac. The first day he had cheddar and penne. The next it was a grilled cheese. His parents were thrilled that he didn't have to eat from a cooler all week and was able to sit down at dinner, in a restaurant with the family.
